Mini Blueberry Breakfast Quesadilla

Simple and delicious! Cover a La Banderita 8" Flour Tortilla (OLE #2710) with La Banderita Oaxaca Quesadilla Blend Cheese (OLE #02199). Add fresh or frozen blueberries, sprinkle with sugar and top with a little more cheese and a second tortilla. Heat on both sides until the cheese melts thoroughly. Sprinkle with powdered sugar and a dollop of whipped cream. Yummy!

Ingredients

  • 12 La Banderita 8” Flour Tortillas
  • 3 cups La Banderita Oaxaca Quesadilla Blend Cheese
  • 3 cups Blueberries, fresh or frozen
  • ¼ cup Sugar
  • ¼ cup Powdered sugar
  • Whipped Cream

Directions

  • Cover tortilla with cheese.
  • Add blueberries, sprinkle sugar evenly over top; add a little more cheese and top with a second tortilla.
  • Heat both sides for 2 minutes until the cheese is melted and tortillas do not separate.
  • Slice into quarters.
  • Garnish with whip cream.
  • Serve immediately.
